Chocolate Peanut Butter Pretzel Cookies

Serves: Makes 18 cookies
1 cup plus 3 tablespoons bread flour
1 cup plus 3 tablespoons cake flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/2 cup creamy peanut butter
1/2 cup vegetable oil
1 1/2 cups brown sugar
2 large eggs, plus 1 yolk
1 cup semi sweet chocolate chips
1 cup pretzels, crushed
Preheat oven to 350
Sift flours, baking soda, baking powder & salt into a small bowl.
In the bowl of a mixer, combine oil, peanut butter, sugar and vanilla. Cream together until well combined and fluffy, about 2 minutes.
Add eggs, one at a time, beating well after each addition.
Gradually beat in the flour mixture. Once combined, stir in the chocolate chips and pretzels.
Using a 2 tablespoon cookie scoop, scoop 6 cookies on a lined baking sheet. Bake for 12 minutes until edges are golden brown. Cool on baking sheet for 2 minutes, then move to a wire rack to finish cooling.
