Crockpot BBQ Chicken Tostadas

Cook: 4 hours 20 minutes

Makes: 12 tostadas

  • 1.5 lbs chicken breasts

  • 1 bottle bbq sauce- I use the original sweet baby ray’s. Reserve about 3/4 cup if you want to top the tostadas with additional sauce

  • 1 packet Italian dressing mix

  • 1/2 cup brown sugar

  • 12 corn tortillas

  • Olive oil, for drizzling

  • 8 ounces mozzarella or cheddar cheese, shredded

  • 1 cup fresh pineapple, cut into small chunks

  • Cilantro for topping, if desired

In a crockpot, combine the chicken, Italian dressing mix and brown sugar. Cook on low for 6 hours, or high for 4 hours

Once the chicken is cooked, shred and set aside.

Preheat the oven to 425°. Place 6 tortillas on a baking sheet. Neyshabur each side of the tortillas with olive oil. Place in the oven for 4 minutes. Flip, and cook for another 4 minutes. Repeat with remaining tortillas.

To assemble the tostadas, top each tortilla with chicken, pineapple, cheese and any other desired toppings. Return to the oven for 6-8 minutes until the cheese is melted. Drizzle with additional BBQ sauce.
