Bruschetta Baked Chicken

Serves: 4

Marinade:

  • 1 tablespoon garlic

  • 1/2 cup olive oil

  • 1/2 cup balsamic vinegar

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 teaspoon dried oregano

  • 1 leaf fresh basil, chopped

 Chicken:

  • 4 chicken breasts

  • 1 package sangria tomatoes (cherry tomatoes work too, we prefer to sangria tomatoes because we like the yellow and orange best!)

  • 1/4 cup olive oil

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 ball fresh mozzarella, slice

  • 3/4 cup parmesan

  • 4 leaves basil, chopped

  • Balsamic glaze for drizzling

Combine the marinade ingredients and add chicken. Marinate for 2 hours (optional, but highly recommend marinating at least 15 minutes).

Preheat oven to 425 and spray a 9x13 baking dish with cooking spray.

Toss together tomatoes, olive oil, salt and pepper. 

Place chicken in the baking dish. Evenl spread the tomatoes around the chicken. 

Place 2 slices of mozzarella on each piece of chicken. Sprinkle Parmesan over the chicken and tomatoes. Drizzle with balsamic glaze 

Bake for 25-30 minutes.  

Note: I like to serve on top of a simple pasta. Cook noodle of choice, drain. Mix cooked pasta with 1/4 cup garlic oil and fresh Parmesan. Stir until combined. Add salt and pepper to taste. Place chicken on top of pasta and drizzle again with balsamic glaze.
