Chocolate Chunk Banana Bread

3 mashed bananas
1/2 cup vegetable oil (115 grams)
2 large eggs
1 teaspoon vanilla
4 teaspoons baking powder
1/2 teaspoon salt
1 cup brown sugar (200 grams)
1 1/2 cups flour (190 grams)
1 bar bittersweet chocolate
Preheat oven to 325. Grease a loaf pan and set aside.
Mash bananas. Mix in oil, vanilla and eggs. Stir until combined.
Stir in the baking powder and salt. Once combined, stir in the brown sugar. Fold in the flour and stir just until combined.
Chop the bar of chocolate, reserving a small section. Gently stir the chocolate into the batter.
Pour the batter into the pan. Using a microplane, grate the reserved chocolate over the batter.
Bake for 30-40 minutes until a toothpick comes out with just a few crumbs.
