Chocolate Crinkle Cookies

Serves: Makes 24 cookies
3/4 cup cocoa powder
1 cup granulated sugar
1/2 cup melted butter
2 large eggs
1 teaspoon vanilla extract
3/4 cup all purpose flour
1 teaspoon salt
1 1/4 cups semisweet chocolate chips
1/2 cup confectioners sugar
In the bowl of a mixer, combine the cocoa powder, sugar and butter. Beat in the eggs, one at a time, until fully incorporated. Mix in the vanilla.
In a separate bowl, combine flour, baking powder and salt. Stir to combine, and stir into the wet mixture until a dough forms.
Cover with plastic wrap and refrigerate for 4 hours.
Preheat the oven to 350. Line 2 cookie sheets with parchment paper and put the confectioners sugar in a bowl. Roll the dough into tablespoon size balls, and toss in the confectioners sugar. Make sure each dough ball is evenly coated. Place 12 cookies onto each cookie sheet.
Bake for 10 minutes. The cookies will still be soft, but will set as they cool. Allow to cool on the cookie sheet for 5 minutes, then remove to a cooling rack to continue cooling.
