Asian Lettuce Wraps

Serves: 4

  • 1 pound ground chicken

  • 2 tablespoon sesame oil

  • 1/3 cup soy sauce

  • 1/3 cup hoisin sauce

  • 1 teaspoon cilantro

  • 1 teaspoon Chinese 5 spice

  • 2 tablespoons chili garlic paste 

  • 2/3 cup shredded carrots

  • 1 can water chestnuts, drained

  • 1/4 cup green onions 

  • 1 package rice sticks

  • 4 tablespoons olive oil

  • 12 Boston Bibb lettuce cups 

Heat sesame oil in a large skillet over medium high heat. Once hot, add the ground chicken, breaking it up as you cook, until cooked through. About 5-7 minutes.

Add the soy sauce, hoisin, cilantro, Chinese 5 spice and chili garlic paste. Stir to combine and cook 2-3 minutes until the sauce starts to bubble just slightly.

Add in carrots, water chestnuts and green onion. Cook for 2 minutes stirring constantly.

In a small skillet, heat the olive oil over high heat. Once hot, add enough rice sticks just to cover the bottom. These will fry up extremely fast- you will need to remove them from the oil as soon as you see them puff up. Drain on a plate lined with a paper towel.

Top each lettuce up with the fried rice sticks and the ground chicken mixture.
