Chicken Noodle Soup

Cook: 30-40 minutes (Instant Pot) 4-5 hours (Crockpot)

Serves: 6

  • 3 stalks celery, diced

  • 3 large carrots, diced

  • 2 shallots, diced

  • 2 cloves garlic, minced

  • 1 tablespoon poultry seasoning

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 teaspoon rosemary

  • 1 teaspoon basil

  • 1 teaspoon oregano

  • 1 teaspoon thyme

  • 1 teaspoon sage

  • 2 teaspoons parsley

  • 1 bay leaf

  • 2 chicken breast

  • 8 cups chicken broth

  • 4 cups egg noodles

Instant Pot:

Using the saute setting, cook the celery, carrots, shallot and garlic until fragrant and soft, about 10 minutes.

Add the seasonings, chicken and broth. Using the pressure cook setting, cook for 15 minutes.

Remove chicken and shred. Replace chicken and add the noodles. Using the pressure cook setting, cook for another 3 minutes.

Crockpot:

Combine all ingredients in the crockpot. Cook on low for 5-6 hours or high for 3-4 hours.

Remove chicken and shred. Replace chicken and add the noodles. Continue cooking for another 15- 20 minutes.
