Blackened Chicken Alfredo

Serves: 4
Chicken:
4 chicken breasts
1/4 cup blackened seasoning
Alfredo:
1 box fettucine noodles
4 tablespoons unsalted butter
2 tablespoons flour
2 cups heavy cream
2 cups Parmesan
1 tablespoons fresh garlic minced
1 tablespoons Italian seasoning
Pepper to taste
Marinate chicken in the blackened seasoning for 30 minutes. Heat grill to 500 degrees.
Grill chicken on each side for 8 minutes. Let rest for 10 minutes and slice.
Bring a large pot of water to a boil and cook according to the package’s instructions. Once cooked, drain and reserve 2 cups of pasta water.
In a large skillet combine butter and garlic over medium-high heat. Cook for about 5 minutes until garlic is fragrant and butter is melted. Add the flour and whisk constantly until combined.
Reduce heat to low and add in the heavy cream, whisking to combine and allow to come to a simmer. Cook 5 minutes and add the parmesan, italian seasoning and pepper. Stir to combine
Once the cheese is melted, about 5 minutes, add the fettucine noodles. If you would like the sauce to be thinner, add the reserved pasta water, 1/4 cup at a time.
Serve topped with the chicken.
