Pumpkin Muffins

Makes: About 12 muffins  

  • 1/2 cup unsalted butter, melted 

  • 2 cups cake flour 

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 1/2 teaspoons kosher salt

  • 2 teaspoons ground cinnamon

  • 2 teaspoon ground ginger

  • 1/2 teaspoon all spice 

  • 1/2 teaspoon ground nutmeg

  • 1 15 ounce can pumpkin 

  • 3 large eggs

  • 2 cups brown sugar


Preheat the oven to 350 degrees and grease a muffin tin. Pumpkin pan linked here


In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, allspice and nutmeg.

In a large bowl, whisk together pumpkin, eggs, brown sugar until totally smooth. Add butter and combine. Whisk in dry ingredients. 

Divide between prepared muffin tins and bake until the tops are puffed and spring back slightly when pressed, 20 to 25 minutes.  I used a medium cookie scoop to divide the batter.
