Broccoli Spinach Calzone

Serves: 4

  • Pre-made pizza dough (I recommend Whole Foods or Trader Joe’s) you can absolutely use homemade dough, but for me this is meant to be a super fast & easy meal

  • 1 16-ounce container ricotta

  • 1/2 teaspoon pepper

  • 3/4 cup Parmesan

  • 1 head of broccoli, steamed (frozen broccoli will work too)

  • 1 10-ounce bag of spinach, sautéed in EVOO, salt & pepper

  • 2 cups pizza blend cheese (I used Kraft)

  • 1/4 cup olive oil

  • 1 jar pizza sauce, warmed, for dipping. (I used Rao’s)

Preheat the oven to 425.

Mix together the ricotta, pepper and Parmesan

Divide the pizza dough in half, and using a rolling pin roll each into a large oval (about 15 inches long 8 inches wide.)

Set one of the dough ovals aside. On the bottom half of the oval, spread the ricotta mixture, spinach, broccoli and pizza blend cheese. Make sure to leave a 1 inch border so the filling doesn’t leak out. The filling will seem like a lot. Repeat on the next

Fold the dough over and and roll the edges to seal. Brush with olive oil.

Bake 25 minutes and let rest for 10 minutes.
