Cornbread

  • 2 eggs

  • 2 cups buttermilk

  • 1/4 cup salted butter, melted

  • 1/4 cup honey

  • 1 1/2 cups cornmeal

  • 1/2 cup canned corn, drained

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

Preheat the oven to 425. Prepare an 8x8 baking dish with nonstick spray.

Whisk together eggs and buttermilk. Add honey and melted butter.

In a medium bowl combine the dry ingredients. Slowly stir in the wet ingredient mixture.

Pour batter in the pan and bake 25-30 minutes. The edges should be browned and the middle should be springy.
