Greek Chicken

Serves: 2

  • 2 chicken breasts

  • 1 cup lemon juice

  • 3 cloves garlic, minced

  • 1 teaspoon oregano

  • 1 teaspoon thyme

  • 1 teaspoon pepper

  • 1/2 teaspoon basil

  • 1/2 teaspoon parsley

  • 1 onion, sliced

  • 3 tablespoons salted butter

  • 2 tablespoons balsamic vinegar

To make the marinade, in a medium bowl, mix together lemon juice, garlic, oregano, thyme, pepper, basil and parsley. Marinate the chicken for 1-2 hours.

In a large skillet, melt the butter over high heat. Add the onions and balsamic.

After about 5 minutes when the onions begin to brown, place the chicken in the center of the skillet. Reduce heat to medium. Cook for 10-12 minutes. Flip, and cook 10-12 more minutes until the internal temperature reads 165.
