French Toast

Serves: 4

  • 2 cups buttermilk

  • 3 eggs

  • 3 teaspoons vanilla

  • 1 teaspoon nutmeg

  • 4 teaspoons cinnamon

  • 1 loaf brioche bread, ends removed & sliced into 1 1/2 inch slices (you should get about 8 slices); while stale bread works best, fresh will work.

  • 4 tablespoons butter

Heat a large skillet over high heat.

Meanwhile, make the custard. In a medium bowl, combine buttermilk, eggs, vanilla, nutmeg and cinnamon. Whisk together until well combined.

Place a wire rack over a baking sheet. Dip each slice of brioche in the custard, flip and let soak for 30 seconds. Place each slice on the wire rack after they have been dipped & soaked.

Put the butter in the hot skillet, once melted reduce to medium-high heat.

Place 2-3 slices of brioche in the skillet. Cook 2-3 minutes on each side. Repeat with the remaining slices.

Top with maple syrup or powdered sugar.
