Sheet Pan Fajitas

Serves: 4

  • 2 chicken breasts, sliced into thin strips

  • 1 green bell pepper, sliced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 orange bell pepper, sliced

  • 1 red onion, sliced

  • 1/2 cup lime juice

  • 3 tbsp taco seasoning - I use Spice Islands

  • 1/4 cup chopped cilantro

  • Dash of cayenne

  • Warm tortillas, for serving (we love Siete Almond Flour tortillas)

Preheat oven to 425. In a gallon bag, combine chicken, onion, bell peppers, cilantro, lime juice, cayenne and taco seasoning. Shake until everything is evenly coated.

Bake for 25 minutes until the chicken is cooked through and the veggies are tender. Broil for 5-7 minutes to crisp the vegetables.
