Funfetti Cookies

Serves: Makes 18 cookies

• 1 plus 3 tablespoons AP flour

• 1 cup plus 3 tablespoons boxed vanilla cake mix

• 2 teaspoons baking powder

• 1 teaspoon salt

• 1 cup butter, softened

• 1 1/2 cups granulated

• 2 large eggs

• 1 teaspoon vanilla extract

• 3/4 cup sugar sprinkles
  

Sift flour, cake mix, baking powder & salt into a small bowl.

In the bowl of a mixer, combine butter, sugar and vanilla. Cream together until well combined and fluffy, about 2 minutes.

Add eggs, one at a time, beating well after each addition.

Gradually beat in the flour mixture. Once combined, stir in the sprinkles

Use a large cokie scoop to scoop the dough onto a baking sheet lined with parchment. Sprinkle with additional sprinkles, if desired. Chill dough for an hour

When ready to bake, preheat oven to 350. Place 4 cookies on a lined baking sheet- they will spread quite a bit. Bake for 9-11 minutes until edges are golden brown. Cool on baking sheet for 2 minutes, then move to a wire rack to finish cooling.
