Spicy Peanut Ramen

Serves: 2

Ramen:

  • 1 pound ground chicken

  • 2 packs ramen noodles, seasoning removed, cooked according to package

  • 3/4 pound broccoli, chopped

  • 1 cup shredded carrots

  • 1 can water chestnuts, drained


Sauce:

  • 1/2 cup crunchy peanut butter

  • 1/2 cup soy sauce

  • 1/2 tablespoon crushed red pepper flakes

  • 1 can coconut milk

  • 1 tablespoon garlic

  • 1/2 tablespoon ginger

  • Juice of 1 lime

For the sauce, whisk together all ingredients and set aside. This recipe makes quite a bit of sauce. If you prefer your ramen to be less sauce, I recommend using half the sauce.

Over medium high heat cook the ground chicken until cooked through, about 6 minutes.

Add in the carrots, water chestnuts and broccoli. Cook for 3 minutes more until the broccoli begins to turn bright green.

Pour the sauce over the chicken and vegetables. Stir to combine.

Add in the noodles and stir to combine. Reduce heat to low and let sit for 10 minutes, until thickened.
