Sweet Potato Casserole

3 pounds sweet potatoes, peeled and cubed
6 tablespoons butter
1/2 cup good quality maple syrup
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup pecans
1/2 cup brown sugar
1 bag mini marshmallows
Preheat the oven to 350 and grease 9x13 pan.
Bring 6 cups of water to a boil. Cook the sweet potatoes until fork tender, about 15 minutes.
Drain the potatoes and return them to the pot. Stir in the butter, maple syrup, cinnamon and nutmeg.
Once combined, dump into the prepared pan and spread until even & smooth.
Toss the pecans in the brown sugar. Spread the pecans evenly over the sweet potatoes.
Top with marshmallows. Place in oven, covered for 15 minutes. Remove foil and cook 15 more minutes.
